Saffron Citrus Mocktail

Ingredients:

- 1/4 teaspoon saffron threads
- 1/2 cup hot water
- 1/4 cup sugar in the raw (or tspn of mung fruit)
- Juice of 1 lemon
- Juice of 1 orange
- Juice of 1 lime
- Ice cubes (If you want to take the extra step, exchange distilled water for rose water)
- Sparkling water or soda water
- Saffron threads and citrus slices, for garnish

Instructions:

1. Make Saffron Infused Simple Syrup: In a small bowl, steep the saffron threads in hot water for about 10-15 minutes to infuse the water with flavor and color. Add the mung fruit or raw sugar to the saffron-infused water and stir until the sugar is completely dissolved, creating a saffron simple syrup. Allow it to cool to room temperature.

2. Prepare Citrus Juices: Juice the lemon, orange, and lime to get fresh citrus juices. Strain the juices to remove any pulp or seeds if desired.

3. Mix Mocktail: In a shaker or large pitcher, combine the saffron-infused simple syrup with the freshly squeezed lemon, orange, and lime juices. Stir well to combine.

4. Assemble Mocktail: Fill serving glasses with ice cubes. Pour the saffron citrus mixture over the ice, filling each glass about halfway. Top up each glass with sparkling water or soda water, stirring gently to combine.

5. Garnish: Garnish each glass with a few strands of saffron and a slice of citrus fruit (lemon, orange, or lime) for an extra pop of color and flavor.

6. Serve: Serve immediately and enjoy the vibrant flavors and refreshing fizz of this Saffron Citrus Mocktail!
